V-10 powerhouse vegetable juice.

I’ve always liked the taste of v8 juice, but it’s not really the best for you. It’s high in sodium among other things. Anyway, I tried come up with a juice that approximates the flavor.

This makes about 4 large glasses. You can also add a splash of olive oil and some pepper to give it some snap!

1 lg cucumber
4 lg roma tomatoes
2 sticks green onions
1 stick rhubarb
1 inch ginger stick
1 bag mini carrots
10 sprigs cilantro
1 red beet
1 large handful spinach
1 lg bell pepper

If you don’t drink it all, store it the fridge. Use a mason jar and fill it to the very top (as little oxygen as possible). Drink it within 4 days or throw it out! It won’t taste fresh after that.
